What does burrata taste like?

Burrata tastes like fresh mozzarella with a soft, creamy heart: mild, milky and slightly sweet, with a light tang, more about cool richness than strong cheesy flavor.

Burrata is a ball of fresh mozzarella wrapped around a filling of stracciatella, which is shredded mozzarella soaked in cream. Cut it open and the inside spills out, soft and spoonable. The flavor is gentle: sweet fresh milk, a little butter, a faint tang and very little salt. It's best very fresh and at room temperature, when the cream is loose and the outside is still springy. Because it's so mild, it's usually paired with something loud: salty prosciutto, juicy tomatoes, peppery olive oil or spicy 'nduja.

Where you’ll see it

As a starter with tomatoes, basil and olive oil, with prosciutto or peaches, on pizza after it comes out of the oven, and on pasta. It's usually meant for sharing with bread.
