What does harissa taste like?
Harissa tastes smoky, garlicky and warmly spicy: a North African chili paste with caraway, coriander and cumin, hotter than paprika but rounder than most hot sauces.
Harissa
smoky, garlicky chili paste
Harissa is a chili paste from Tunisia, made from dried red chilies blended with garlic, olive oil and spices like caraway, coriander and cumin. It tastes earthy and a bit smoky, with real heat that builds rather than stings. Some versions add roasted red peppers or tomato, which makes them sweeter and milder. Rose harissa adds dried rose petals for a floral, gentler take. Jars vary a lot, from mild and sweet to properly hot, so taste before you go big.
Where you’ll see it
Stirred into shakshuka and stews, rubbed on roast chicken, lamb and carrots, swirled into yogurt or mayo as a dip, and served with couscous. Lots of modern menus drizzle harissa honey on chicken or pizza.
Order it if you like chipotle, smoked paprika and garlic, and want heat with more flavor than burn.
Quick questions
- Is harissa very spicy?
- It depends on the jar. Traditional Tunisian harissa is fairly hot; many supermarket and rose harissas are milder. On a menu, it usually means medium heat.
- What's the difference between harissa and sriracha?
- Sriracha is a thin, vinegary, garlicky sauce. Harissa is a thicker paste with caraway, coriander and cumin, so it's earthier and smokier, and less sharp.
