The real difference
Pho's broth simmers beef bones with charred onion, ginger, star anise and cinnamon, then gets strained clear. It comes with flat rice noodles and a plate of herbs, lime and chili to add yourself. Ramen uses springy wheat noodles in pork, chicken or miso broth, with toppings like chashu pork and a soft egg.

Quick questions
- Is pho lighter than ramen?
- Usually. Pho's broth is clear and lean, while ramen broths like tonkotsu are cloudy with pork fat. Some shio ramen is light too.
- How do you pronounce pho?
- Closer to fuh than foe, with a tone English doesn't have. Nobody at the counter will mind either way.
