A small, tight, torpedo-shaped head of pale chicory leaves, often called Belgian endive.
What it tastes like
Crisp, juicy and lightly bitter, with a clean finish. Braised, it turns soft and sweet.
Where you’ll see it
Salads with blue cheese and walnuts, as scoops for dips, and braised or baked in a gratin at French spots.
