A mild red chili from the French Basque Country, dried and ground into a fruity, gently warm powder. Also called piment d'Espelette.
What it tastes like
Fruity, sweet and lightly smoky with a soft heat, closer to paprika than to cayenne.
Where you’ll see it
Basque and French menus sprinkle it on eggs, fish, piperade, aioli and charcuterie.
