What is shishito?

A small, thin-skinned Japanese pepper, usually blistered and salted. Most are mild, but every so often one is surprisingly hot.
What it tastes like
Grassy, smoky and a little sweet once charred, with soft, tender skin. Each one is a tiny gamble.
Where you’ll see it
Bar snacks at izakayas and gastropubs, blistered with salt, lemon, bonito flakes or a dipping sauce.
