What does a Bellini taste like?

A Bellini tastes like ripe white peach in bubbles: soft, juicy and gently sweet, with the light fizz of prosecco and very little alcohol bite.

Bellini

peach nectar with bubbles

A Bellini is white peach purée topped with prosecco, the Italian sparkling wine. Done right, it tastes like biting into a ripe peach while sipping something fizzy: soft, perfumed fruit, a little sweetness and a gentle sparkle. The purée makes it thicker and pulpier than a mimosa, almost like a peach nectar. Bars that use bottled peach syrup or schnapps end up with something sweeter and more candy-like, so it really depends on where you order it. Either way it's light and very easy to drink fast.

Where you’ll see it

On brunch menus and at Italian restaurants, usually in a flute. You'll see seasonal versions too, with strawberry, raspberry or other fruit purées swapped in for the peach.

Order it if a mimosa feels too sharp and you want something softer, peachier and a little sweeter.

Quick questions

What's the difference between a Bellini and a mimosa?
A Bellini is peach purée with prosecco. A mimosa is orange juice with sparkling wine. The Bellini is softer and thicker, the mimosa brighter and more tart.
Is a Bellini strong?
No. It's mostly prosecco cut with peach purée, so it lands somewhere around 7% to 9%, lighter than a regular glass of wine.
