The real difference
A mimosa is roughly half orange juice, half sparkling wine, usually cava or prosecco. A Bellini is prosecco with white peach purée, which makes it thicker, softer and sweeter. The mimosa tastes tangier; the Bellini tastes like ripe peaches.
