What does a virgin mojito taste like?

A virgin mojito tastes like fizzy mint limeade: lots of fresh mint, tart lime and a little sugar, topped with soda over crushed ice.

A virgin mojito is a mojito without the rum: fresh mint and lime muddled with sugar, then topped with soda water and crushed ice. Muddling (pressing in the glass) releases the mint's oils, so it smells and tastes like a cool garden. Lime makes it tart, sugar balances it, and the soda keeps it light. Without rum it's thinner and brighter than the original, closer to a fancy limeade. Some places use lemon-lime soda or ginger ale instead of plain soda, which makes it sweeter.

On mocktail and kids' menus at most bars and restaurants, served tall over crushed ice with a mint sprig and lime wedge. Fruit versions, like strawberry or passion fruit, are common.
