What is absinthe?
Absinthe · French
Strong anise and wormwood spirit, often green, that turns cloudy when cold water is added. Bartenders use it as a rinse.
What it tastes like
Intense licorice, fennel and bitter herbs, very high in alcohol. Diluted, it turns soft, sweet and cooling.
Where you’ll see it
Cocktail bars as a glass rinse in Sazeracs and corpse revivers, or served with a slow drip of water.
