South Asian pickle of fruit or vegetables, often mango or lime, preserved in oil, salt and spices.
What it tastes like
Sour, salty, spicy and very intense, with mustard seed and fenugreek. A little goes a long way.
Where you’ll see it
On thalis, with dal and rice, and alongside curries and parathas at Indian and Pakistani restaurants.
