What it tastes like
Mildly earthy and peppery, a little floral. The color is the main event; the flavor is gentle.
Where you’ll see it
Cochinita pibil, al pastor marinades, Filipino and Puerto Rican rice, and as natural coloring in cheddar and chorizo.
