What is carbonara?
Carbonara · Italian
Roman pasta coated in egg yolk, pecorino, black pepper and crispy guanciale. The creaminess comes from egg and cheese, not cream.
What it tastes like
Rich, salty and peppery, with a velvety yolk sauce and chewy bits of crisp pork. Like bacon and eggs went to Rome.
Where you’ll see it
Almost every Italian menu, usually with spaghetti or rigatoni, plus carbonara pizzas and carbonara-style twists on other dishes.
