What is gricia?

Roman pasta with guanciale, pecorino and black pepper. Basically amatriciana without the tomato, or carbonara without the egg.
What it tastes like
Salty, porky and peppery, with a glossy sauce made from pasta water, rendered fat and cheese. Lean and punchy.
Where you’ll see it
Roman trattorias and serious pasta spots, often with rigatoni or tonnarelli alongside the other three Roman classics.
