Baked sealed in a parchment paper pouch so the food steams in its own juices, often opened at the table.
What it does to the food
Gentle and moist. Fish comes out tender and fragrant with whatever herbs, citrus or wine went into the pouch.
Where you’ll see it
Usually fish like sole, cod or salmon at French and Mediterranean places, sometimes chicken or vegetables.
