Japanese fried chicken: bite-size thigh pieces marinated in soy, ginger and garlic, dusted in potato starch and fried until very crisp.
What it tastes like
Craggy, crackly crust and super juicy dark meat, salty and gingery. Usually served with a lemon wedge and Japanese mayo.
Where you’ll see it
Izakaya menus, bento boxes, ramen shop sides and bar snacks; the word is also used for fried squid or fish.
