What is persimmon?
Persimmon
An orange autumn fruit with honey-sweet flesh. Fuyu are crisp like an apple; hachiya have to be soft and jelly-ripe before you eat them.
What it tastes like
Sweet like honey and apricot with a hint of cinnamon. An underripe hachiya is shockingly chalky and dry.
Where you’ll see it
Fall salads with burrata or bitter greens, cheese boards, desserts, and dried as hoshigaki at Japanese and Korean restaurants.
