What it tastes like
Tropical and a bit wild, with ripe fruit, green pepper and an earthy funk. Ranges from clean and bright to rustic and smoky.
Where you’ll see it
Mezcal bars and modern Mexican menus, usually poured neat in a small cup as part of a list of rare agave spirits.
