Spirit from northern Mexico and Texas distilled from desert spoon, a spiky plant related to agave. Grassy and bright, usually less smoky than mezcal.
What it tastes like
Green, herbal and a little piney or minty, with a clean, mineral finish. Lighter on smoke than most mezcal.
Where you’ll see it
Agave-focused bars and Mexican restaurants, sipped neat or used in place of tequila in margaritas and palomas.
