What is rhubarb?
Rhubarb
Tart pink stalks treated like fruit in desserts, though it's technically a vegetable. Only the stalks are eaten; the leaves are toxic.
What it tastes like
Very sour and juicy, almost lemony raw. Cooked with sugar it turns soft, pink and sweet-tart.
Where you’ll see it
Spring pies, crumbles and compotes, sauces for pork and duck, pickled on cheese boards, and in spring cocktails.
