What does salt-baked mean on a menu?
Salt-baked
Buried in a thick crust of salt (sometimes mixed with egg white) and baked, then cracked open to serve.
What it does to the food
Very moist and evenly seasoned but not salty, since the crust traps steam around the food.
Where you’ll see it
Whole fish like branzino, plus beets, celery root and potatoes at Mediterranean and modern restaurants.
