What is soba?

Thin, grayish-brown Japanese buckwheat noodles, eaten cold with a dipping sauce or hot in broth.
What it tastes like
Nutty, earthy and a little grainy, with a lovely firm chew. Cold soba with dipping sauce is clean and refreshing.
Where you’ll see it
Japanese restaurants, soba shops and izakayas, often as zaru soba (cold on a bamboo tray) or with tempura.
