Mexican spirit made from blue agave, mostly in Jalisco. Comes clear and unaged as blanco or barrel-aged as reposado and añejo.
What it tastes like
Peppery, grassy and lightly sweet from cooked agave when unaged. Aged bottles pick up vanilla and caramel from the barrel.

Every bar list, in margaritas and palomas, as shots with lime and salt, or neat at agave bars.
