A simmering pot of broth in the middle of the table, where you cook thin meats, seafood, vegetables and noodles yourself.
What it tastes like
Depends on the broth: fiery, numbing Sichuan mala or mild and herbal. Dipping sauces add sesame, garlic and chili.
