What is shabu-shabu?

Japanese hot pot: you swish thin slices of beef or pork through simmering broth at the table, then dip them in sesame or ponzu sauce.

What it tastes like

Very tender, just-cooked meat, with the dipping sauces bringing the flavor. The broth gets richer as you go and ends with noodles or rice.

Where you’ll see it

Shabu-shabu and hot pot restaurants, usually as a set course or all-you-can-eat.
