What is nigiri?
Nigiri · Japanese
Classic sushi: a small hand-pressed mound of vinegared rice topped with a slice of fish or seafood, often with a dab of wasabi.
What it tastes like
Cool, tender fish over loose, slightly tangy, body-temperature rice. Dip the fish side lightly in soy, not the rice.
Where you’ll see it
Sushi bars, ordered by the piece or pair, and as the heart of an omakase meal.
