A chef's-choice meal, usually at a sushi counter: you sit back and the chef serves a set run of courses, often one piece at a time.
What it tastes like
Whatever is best that day, often moving from light white fish to rich fatty tuna and sea urchin, ending with egg or soup.
Where you’ll see it
Sushi counters and high-end Japanese spots as a fixed-price option; some cocktail bars and other restaurants borrow the word too.
