What it tastes like
Clean, cool and silky. Lean tuna is meaty, salmon buttery, yellowtail rich, and the quality of the fish is everything.
Where you’ll see it
Sushi bars and Japanese restaurants as a platter or chef's assortment (moriawase), and as part of omakase.
