Made with barley dried over burning peat, which gives whisky a smoky, sometimes medicinal flavor. Islay scotches are the famous examples.
What it tastes like
Smoky, like a bonfire or smoked fish, sometimes with iodine, seaweed or tar, over sweet malt underneath.
Where you’ll see it
Scotch lists, smoky whisky flights, and cocktails like the Penicillin that float a peated whisky on top.
