What is pistou?

Provençal sauce of basil, garlic and olive oil, like pesto without the pine nuts and usually without cheese.
What it tastes like
Fresh, grassy and very garlicky, lighter and looser than pesto since there are no nuts or cheese weighing it down.
Where you’ll see it
Swirled into soupe au pistou (a vegetable soup), and on fish, vegetables and pasta at French restaurants.
