What is oloroso?
Oloroso · Spanish
Dark sherry aged with air and no yeast layer, so it turns rich and nutty. Dry unless the label says sweet.
What it tastes like
Walnut, toffee, leather and dried fruit, full bodied but dry. Sweet versions taste like Christmas cake.

Sherry lists, with stews and aged cheese, and in whisky as a sherry cask finish.
